This expertly balanced blend brings out the deep flavours of traditional paya with fragrant coriander and cumin, warmth from turmeric, a kick of red chilli, and classic whole spices like cinnamon, cloves, and cardamom—rounded off with garam masala.

Use it to create a thick, flavour-packed gravy that coats beautifully around slow-cooked beef or lamb trotters. Whether you prefer your paya as a rich stew to scoop up with naan, or slightly thinner and more soupy to enjoy in a bowl with lemon and fresh coriander, this mix helps you achieve that authentic taste without needing loads of individual spices.

Ingredients 

Coriander, Red Chilli Powder, Ginger Powder, Salt, Cinnamon, Cloves, Cardamom, Turmeric, Cumin, Garam Masala, and other natural spices.

How to Use 

  1. Clean and prep beef or lamb trotters.

  2. Brown onions in oil, then add trotters and sear.

  3. Add Shan Paya Masala Mix along with garlic, ginger, and tomatoes.

    • You can also use a pressure cooker to reduce cooking time.

  5. Finish with fresh coriander, sliced green chillies, and a squeeze of lemon.
