Slow-Cooked Oxtail (6–8 Hours)
Season generously with salt, pepper, and your favourite herbs/spices.
Brown the oxtail in a hot pan with a little oil until well coloured on all sides.
Transfer to a slow cooker or casserole pot with onions, carrots, celery, garlic, stock and aromatics.
Cook on low heat for 6–8 hours (or in the oven at 150–160°C) until the meat is tender and falls off the bone.
Skim excess fat if needed, taste and adjust seasoning, then serve with mashed potatoes, rice, or crusty bread.
Braised Oxtail (3–4 Hours)
Preheat oven to 160°C (fan 140°C) / 320°F / Gas mark 3.
Sear the oxtail pieces in a hot pan with oil until browned.
Deglaze the pan with stock, wine, or a mix of both, scraping up browned bits.
Transfer everything to an oven-safe dish, ensuring the oxtail is mostly covered with liquid.
Cover and cook in the oven for 3–4 hours until tender.
Rest for 10 minutes before serving to let the flavours settle and the sauce thicken slightly.
