We freshly prepare your Beef Shin exactly how you like it:
Osso Buco – Thick Slices (2–3cm)
Perfect for impressive platters, braised dishes and slow roasts where you want a big, chunky piece on the bone.
Osso Buco – Mid Slices (1–2cm)
Great all-round size for classic osso buco, stews and curries – ideal balance of meat, bone and sauce.
Osso Buco – Thin Slices (<1cm)
Faster cooking compared to thicker cuts; ideal for gravy-based dishes, curries and pressure-cooker recipes.
Diced – Large Cubes (50–60g)
Chunky pieces for rustic stews, slow-cooked curries and braises where you want visible, hearty pieces of meat.
Diced – Mid Cubes (25–30g)
Versatile everyday size for curries, stews, pasta dishes and rice meals.
Diced – Small Cubes (10–15g)
Ideal for kids’ meals, pies, samosas, mixed dishes, pasta sauces or where you want lots of small, tender bites.
Refrigeration:
Keep chilled at 0–4°C. Once opened, use within 1 day and always follow the ‘use by’ date on the packaging.
Freezing:
Freeze as soon as possible after purchase and always before the ‘use by’ date.
Defrost thoroughly in the fridge for at least 12 hours before cooking.
Do not refreeze once defrosted.
Season:
Pat dry and season generously with salt, pepper and your favourite herbs or spices (rosemary, thyme, bay leaves, smoked paprika, or garam masala work beautifully).
Brown the Meat:
Heat a little oil in a heavy pan and sear the shin on all sides until nicely browned. This step adds deep flavour.
Braise Slowly:
Transfer to a casserole dish, Dutch oven or slow cooker.
Add onions, garlic, carrots, celery, tomatoes or your chosen veg.
Pour in stock, water or a mix of stock and tomato/passata until the meat is partially covered.
Cook low and slow:
Oven: 150–160°C for 4–5 hours
Slow Cooker: Low for 6–8 hours
Cook until the meat is tender and falling off the bone.
Rest & Serve:
Let it rest for 10 minutes, skim excess fat if needed, then serve with creamy mash, rice, naan, crusty bread or roasted vegetables.
