Storage Guidelines:
- Suitable for Freezing: Freeze as soon as possible after purchase and always before the 'use by' date. Defrost thoroughly in the fridge for at least 12 hours. Do not refreeze once defrosted, and cook on the same day.
- Refrigeration: Keep the meat refrigerated and consume within 1 day of opening. Follow the 'use by' date on the packaging for freshness.
Cooking Guide:
Slow-Cooked Beef LMC Stew (serves approx. 3 per 500g)
Ingredients:
- Fresh Halal British Beef LMC (Boneless)
- Sea salt and freshly ground black pepper
- 1 onion (chopped)
- 3 carrots (sliced)
- 2 celery stalks (sliced)
- 3 garlic cloves (minced)
- Beef stock or water
- 2 tablespoons of tomato paste (optional)
- Bay leaves and thyme (optional)
- Cooking oil
Preparation:
- Preheat the Oven: Set your oven to 160°C (Fan 140°C) or Gas Mark 3.
- Season the Beef: Season the LMC cut with sea salt and freshly ground black pepper.
- Brown the Beef: Heat a little oil in a large pan over medium heat. Sear the beef on all sides for 4-5 minutes, until it forms a golden-brown crust, sealing in the flavours.
- Prepare the Vegetables: In the same pan, add onions, carrots, celery, and garlic, and sauté for a few minutes until softened. Stir in tomato paste for extra richness, if desired.
- Transfer to a Casserole Dish: Place the browned LMC cut and sautéed vegetables in a large casserole dish. Add enough beef stock or water to cover the meat halfway. For additional depth, add bay leaves and thyme.
- Slow Cook in the Oven: Cover the dish with a lid or foil and cook in the preheated oven for 2.5 to 3 hours, or until the meat is tender and falls apart easily.
- Rest and Serve: Let the beef rest for a few minutes before serving. Serve with the vegetables and the rich broth for a hearty meal.
Stovetop or Slow Cooker Option:
For stovetop cooking, simmer the beef LMC cut in a covered pot over low heat for 3-4 hours. Alternatively, use a slow cooker and cook on low for 6-8 hours until tender.
