The noisette is a small, circular cut of lamb surrounded by fat, which is taken from the loin or saddle.

Baby Lamb Meat
Suitable for home freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Not suitable for cooking from frozen. Defrost thoroughly for a minimum of 24 hours in the fridge. Follow the preparation guidelines above. Once defrosted use on the same day and do not refreeze. Keep refrigerated. Once opened, consume within 1 days and by 'use by' date shown.
Instructions: Temperature: 180°C, 160°C, Gas 4
Time: 2 hrs 30mins
Place in a roasting tin. Cover in foil and place in the centre of pre-heated oven for 2 hours. Remove from oven, carefully remove foil and return for a further 30 minutes. Once cooked, rest for 10 minutes before serving.
Instructions: Not suitable for microwave cooking
Preparation and Usage
Remove lamb from packaging and rest at room temperature for 10 minutes before cooking.
Tip: For perfect seasoning, make a simple paste of oil, salt and pepper and rub all over the lamb before cooking.
