The noisette is a small, circular cut of lamb surrounded by fat, which is taken from the loin or saddle.

Ingredients: Mutton Meat
Suitable for home freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Not suitable for cooking from frozen. Defrost thoroughly for a minimum of 24 hours in the fridge. Follow the preparation guidelines above. Once defrosted use on the same day and do not refreeze. Keep refrigerated. Once opened, consume within 1 days and by 'use by' date shown.
Instructions: Temperature: 180°C, 160°C, Gas 4
Time: 2 hrs 30mins
Place in a roasting tin. Cover in foil and place in the centre of pre-heated oven for 2 hours. Remove from oven, carefully remove foil and return for a further 30 minutes. Once cooked, rest for 10 minutes before serving.
Instructions: Not suitable for microwave cooking
Preparation and Usage
Remove Mutton from packaging and rest at room temperature for 10 minutes before cooking.
Tip: For perfect seasoning, make a simple paste of oil, salt and pepper and rub all over the Mutton before cooking.
