Storage Instructions:

  • Suitable for home freezing. Freeze as soon as possible after purchase, but always by the "use by" date shown.
  • Defrosting: Defrost thoroughly in the fridge for at least 12 hours. Not suitable for cooking from frozen. Once defrosted, use the same day and do not refreeze.
  • Refrigeration: Once opened, consume within 1 day and by the "use by" date shown.

For a perfect Veal Côte de Boeuf dish:

  1. Preparation: Allow the veal prime rib to come to room temperature for about 30 minutes before cooking.

  2. Seasoning: Season with salt, pepper, and herbs like thyme, sage, or rosemary. Lightly coat with olive oil for added richness.

  3. Cooking:

    • Roasting: Preheat the oven to 180°C. Sear the veal rib in a hot pan until it’s golden brown on all sides. Transfer to the oven and roast for 12-15 minutes per 500g for a perfect medium-rare, or until the internal temperature reaches 60°C. Let it rest for 10 minutes before carving to retain its juices.
    • Grilling: Grill over medium-high heat for 5-7 minutes per side, depending on thickness, for a nicely charred exterior and tender inside.
    • Pan-Searing: Heat oil in a pan and sear the veal rib for 4-5 minutes on each side, then reduce heat and cook to your desired doneness. Baste with butter, garlic, and herbs for an extra burst of flavour.
  4. Serving: Slice the veal Côte de Boeuf and serve with light sides such as roasted vegetables, herbed potatoes, or a refreshing salad. A lemon herb sauce or a light veal jus complements the dish beautifully.
