Preparation
Remove the lamb leg from the fridge about 1 hour before cooking.
Preheat oven to 180°C (fan 160°C) / 350°F.
Roasting (Carve & Slice)
Place the marinated lamb leg in a roasting tray with a splash of stock or water.
Cover loosely with foil and roast for around 1.5–2 hours, depending on your preferred doneness.
For a crispy outside, remove foil for the last 20–30 minutes.
Rest for 10–15 minutes before slicing to keep it juicy.
Slow-Cooking (Pull-Apart Style)
Cook in a slow cooker with a little stock or water on low for 6–8 hours or high for 4–5 hours until tender and shreddable.
Optionally finish in a hot oven for 15–20 minutes to crisp the outside.
Grilling (for butterflied pieces / thick steaks)
Grill over medium–high heat for around 15–20 minutes per side, turning occasionally, then rest for 10 minutes before slicing.
Serve with:
Roast or mashed potatoes, wedges or rice
Roasted or grilled vegetables, salad or couscous
Mint sauce, yoghurt-mint dressing, chimichurri or gravy
Perfect for family gatherings, Eid, Sunday roasts, and festive celebrations.
Refrigerate: Keep chilled at 0–4°C and cook by the “use by” date. Store cooked leftovers in an airtight container and use within 2 days.
Freeze: Can be frozen (raw or cooked) for up to 3 months, well wrapped. Thaw in the fridge overnight before cooking or reheating.
