Is striploin the same as ribeye?
No — striploin comes from the loin, a firmer, less marbled muscle than ribeye's rib section, even at this high marble score of 6-7. It's cut into steaks from 150g up to a 1kg whole piece.
How do I stop the steak curling in the pan?
Score the fat edge at 1-2cm intervals before it hits the heat, and bring the steak fully to room temperature first — an unscored rim is what pulls a steak into a curl as the fat renders.
