Lightly oil and season both sides of the chops. Heat a heavy-based frying pan over high heat until smoking. Place chops in the dry pan and cook for 1 minute per side, then reduce to medium heat and cook for another 1-2 minutes per side for medium or 4-5 minutes per side for well done. Rest for 5 minutes before serving.
