Storage Instructions:

  • Suitable for home freezing. Freeze as soon as possible after purchase, but always before the "use by" date shown.
  • Defrosting: Defrost thoroughly in the fridge for at least 12 hours. Not suitable for cooking from frozen. Once defrosted, use the same day and do not refreeze.
  • Refrigeration: Once opened, consume within 1 day and by the "use by" date shown.

Cooking Guide:

For a perfect veal silverside dish:

  1. Preparation: Take the veal out of the fridge 30 minutes before cooking to allow it to come to room temperature.

  2. Seasoning: Rub with olive oil, salt, pepper, and herbs like rosemary and thyme. Marinate for a few hours for deeper flavour if desired.

  3. Cooking:

    • Roasting: Preheat the oven to 180°C. Sear the silverside in a hot pan until browned on all sides. Transfer to the oven and roast for 25-30 minutes per 500g, or until the internal temperature reaches 60°C for medium. Rest the meat for 10 minutes before slicing thinly.
    • Braising: For a more tender result, braise the silverside in stock or wine with vegetables and herbs. Cover and simmer for 2-3 hours on low heat until tender.
    • Slow Cooking: Place the veal silverside in a slow cooker with vegetables and broth. Cook on low for 6-8 hours for a melt-in-the-mouth texture.
  4. Serving: Serve with roasted vegetables, mashed potatoes, or slice thinly for sandwiches or wraps. This cut also works beautifully in stews and casseroles.
