Storage Guidelines:

  • Suitable for Freezing: Freeze as soon as possible after purchase and always before the 'use by' date. Defrost thoroughly in the fridge for at least 12 hours. Do not refreeze once defrosted, and cook on the same day.
  • Refrigeration: Keep the meat refrigerated and consume within 1 day of opening. Follow the 'use by' date on the packaging for freshness.

Cooking Guide:

Pan-Seared Beef Tenderloin Steak (serves approx. 3 per 500g)

Ingredients:

  • Fresh Halal British Beef Tenderloin (Boneless)
  • Sea salt and freshly ground black pepper
  • 2 tablespoons butter
  • 2 garlic cloves (smashed)
  • Fresh thyme or rosemary (optional)
  • Cooking oil

Preparation:

  1. Season the Tenderloin: Generously season the beef tenderloin with sea salt and freshly ground black pepper. Let it rest at room temperature for 30 minutes before cooking.
  2. Heat the Pan: Heat a heavy-bottomed skillet or cast-iron pan over high heat. Add a little cooking oil and allow it to become very hot.
  3. Sear the Tenderloin: Place the tenderloin in the pan and sear for 2-3 minutes per side until a deep golden-brown crust forms. Lower the heat to medium if needed, to avoid burning.
  4. Add Butter and Aromatics: Add butter, smashed garlic, and fresh thyme or rosemary to the pan. Spoon the melted butter over the tenderloin as it cooks to enhance flavour and richness.
  5. Rest the Meat: Remove the tenderloin from the pan and let it rest for 5-10 minutes before slicing to lock in the juices for maximum tenderness.

Grilling Option:
For grilling, preheat the grill to high heat. Grill the tenderloin for 3-4 minutes per side for medium-rare, or adjust cooking time according to your preferred doneness. Let it rest before serving.

Roasting Option:
Preheat the oven to 180°C (Fan 160°C). Sear the tenderloin on all sides in a hot pan, then transfer to the oven and roast for 15-20 minutes, depending on thickness, until the internal temperature reaches your preferred doneness. Rest before slicing.
