Storage Instructions:

  • Suitable for home freezing. Freeze as soon as possible after purchase, but always before the "use by" date.
  • Defrosting: Defrost thoroughly in the fridge for at least 12 hours. Not suitable for cooking from frozen. Once defrosted, use the same day and do not refreeze.
  • Refrigeration: Once opened, consume within 1 day and by the "use by" date shown.

Cooking Guide:

For a perfect veal knuckle dish:

  1. Preparation: Remove the veal knuckle from the fridge about 30 minutes before cooking to bring it to room temperature.

  2. Seasoning: Season generously with salt, pepper, and your favourite herbs like thyme or bay leaves. For added richness, marinate with garlic, olive oil, and rosemary for several hours or overnight.

  3. Cooking:

    • Braising: Preheat the oven to 160°C. Sear the veal knuckle in a hot pan with oil until browned on all sides. Transfer to a deep roasting dish and add stock, vegetables, and herbs. Cover and braise in the oven for 3-4 hours until the meat is tender and falling off the bone.
    • Slow Cooking: Place the seasoned knuckle in a slow cooker with broth, onions, carrots, and celery. Cook on low for 6-8 hours for a melt-in-the-mouth texture.
    • Stewing: Cut the veal knuckle into smaller pieces and stew with vegetables and wine or stock for a comforting and hearty meal.
  4. Serving: Serve with mashed potatoes, roasted vegetables, or crusty bread. Veal knuckle also makes an excellent base for rich, homemade veal stock, perfect for soups and sauces.
