How should I cook boneless goat meat?

Boneless goat is lean, so it works best either slow and wet or fast and hot, with little in between. Cubes belong in a curry or salan, browned and then simmered with onion, tomato and spice until they give. Strips take a quick, hard fry of a few minutes. A whole chunk roasts, but it wants basting or a covered tray. Kid goat is the young animal, so it is finer-grained and reaches tenderness sooner than mature goat.

The goat sold here is British, and we buy only non-stunned halal meat. How is boneless goat meat delivered?

Boneless goat meat leaves the shop on one of three routes: our own vans across East London, tracked DPD delivery nationwide, or collection from our East Ham branch, the only one of the four shops that handles pickup for online orders. Every cut is vacuum-sealed and packed into a Woolcool insulated box, which is natural wool and compostable, with ice gel packs holding 0-4C for up to 72 hours. DPD delivers Tuesday to Saturday, and dates can be booked up to a month ahead.

Can I freeze goat curry cubes in meal-sized portions?

Yes, and meal-sized portions freeze better than one solid block. If you have had the goat cut into cubes or strips, freeze it in portions the size of one dish, because small pieces frozen together thaw unevenly. Freeze on the day it arrives and it keeps for up to 12 months in the vacuum bag, which is freezer-safe. Unfrozen, boneless goat keeps up to 6 days in the fridge. Thaw overnight and cook it through.
