How do you cook beef marrow bones?

Roast them hot and briefly. At about 220C, 15 to 20 minutes is usually enough, and they are ready when the marrow has softened and is just beginning to bubble at the edges; leave them longer and it renders out into the tray. Marrow bones come whole, in 160-180g chunks, or as the Halfs Boats and Quarter boat options on the cutting selector, so the format is decided before anything is cut. Scooped out of a roasted bone and beaten into softened butter, the marrow is what most bone marrow butter recipes are after. Shin bone-in is the other one worth browning first, since a hard sear before a long braise deepens the finished sauce.

Marrow bones for a rich stock, shin bone-in when you want meat in the pot as well. Marrow bones give up their fat and gelatine quickly, which suits a short stock or a base you intend to reduce hard. Shin bone-in carries the shank meat and the connective tissue that turns to gelatine over two or three hours, and it is cut as Osso Buco at three dice grades for exactly that job.
