Vegetables, Beans & Pulses Buying Guide & Frequently Asked Questions

Everything you need to know about our certified Halal butcher cuts, chilled packaging, and delivery.

Tinned or dried chickpeas, which should I buy?

Tinned for speed, dried for volume. A 400g tin of KTC chickpeas gives about 240g drained, ready in the time it takes to make the masala, which is what you want for a weeknight murgh cholay with a whole chicken cut into 8 and a Shan Murgh Cholay mix. A 2kg bag of TRS chickpeas from the lentils page costs less per serving but needs an overnight soak and an hour on the stove. KTC kala chana and KTC red kidney beans follow the same rule.

Which tinned tomatoes are best for a curry base?

TRS Italian chopped tomatoes when you want the sauce to come together fast, as in a keema with lamb mince or a chicken karahi; TRS plum peeled tomatoes, crushed by hand, when you want a smoother, sweeter gravy for a nihari or a pasta sauce with beef mince. A spoon of Cirio tomato puree from the pastes page deepens either.

Can I make palak gosht and saag with tinned spinach?

Yes, and most restaurants do. TRS spinach puree goes straight into the pot once the mutton or boneless lamb is tender; TRS spinach leaf keeps more texture for saag chicken. For the Punjabi mustard greens, sarson ka saag needs only a tarka of ginger, garlic and butter ghee. Canned okra makes a quick bhindi gosht with diced goat.
