Halal lamb mince comes in two grades at Onlinemeatshop: Baby Lamb Mince Lean, and Baby Lamb Mince at 15-20% fat. Both are Certified Halal, and both carry Red Tractor Approved on the product title.

The fat figure is the real decision. The lean grade suits keema matar and stuffed vegetables, where the sauce is already carrying fat. The 15-20% grade is what holds a seekh kebab or a kofta together on the grill and bastes it as it cooks.

The grind is yours to choose. Our butchers mince on 4.5, 6, 8 or 9mm plates, or hand-chop the lamb under 5g for the coarse keema texture a plate cannot produce. Every order is minced on the day it is dispatched.

Should I buy lean lamb mince or 15-20% fat lamb mince?

Choose lean when the dish supplies its own fat, and 15-20% when the mince has to hold a shape. Lean lamb mince is the one for keema matar, a shepherd's pie base, stuffed peppers and vine leaves, where ghee, oil or a tomato masala is already doing that work. The 15-20% grade is the grilling grade: seekh kebab, kofta and patties bind better and stay moist over direct heat, because the fat renders through the meat as it cooks.

Can I choose how coarsely the lamb is minced?

Yes, every mince product page carries a cutting selector and you set the grind before the meat is prepared. Our butchers machine-mince on 4.5mm, 6mm, 8mm or 9mm plates, so you can go fine for a smooth kofta paste or coarse for a keema with visible texture. There is also a hand-chopped option, cut under 5 grams by knife, which is the traditional grind for keema and samosa filling. Choosing a cut is free; only weight and the per-kilo price move the total.

Yes, both lamb mince products carry Red Tractor Approved on the product title: the lean baby lamb mince and the 15-20% fat mince. The lamb itself is British, and we buy only non-stunned halal meat. It is minced by Noori Halal Butchers, the family butcher behind Onlinemeatshop, from lamb bought through halal-certified suppliers into Noori Halal Ltd. How does lamb mince stay cold on a nationwide delivery?

Mince travels in an insulated Woolcool box with ice gel packs that hold 0 to 4 degrees Celsius for up to 72 hours in transit. Each cut is vacuum-sealed in its own food-grade bag first, and the whole order is wrapped in a food-safe protective sleeve. Nationwide orders go out with DPD on a tracked service that delivers Tuesday to Saturday: the order is dispatched the next working day and delivered the day after that, with tracking on every parcel.

Can I refreeze lamb mince after it has thawed?

Thaw lamb mince once, in the fridge overnight, then cook it through; do not put a thawed pack back into the freezer. If you will only use part of an order, split it into meal-sized portions before the first freeze rather than after. Frozen on the day it arrives, mince keeps for up to 12 months, and the vacuum seal is freezer-safe. In the fridge it is good for up to 6 days.
