Halal chops from British lamb, mutton and goat, cut from the front (shoulder end), the back (loin) and the chump. Front chops carry more fat and bone and suit a slow grill or a karahi; back chops are the leaner loin chop for the pan; chump chops are the larger, meatier cut from the leg end.

The lamb and mutton chops are dry aged and Red Tractor Approved where the product title states it, and the marinated lamb and mutton chops come ready for the grill in our in-house marinade.

All chops are cut to order by our halal butchers, vacuum-sealed and delivered nationwide in an insulated box.

What is the difference between lamb chops and mutton chops?

Age and flavour. Lamb chops are from a young animal, smaller and milder, and cook in a few minutes; mutton chops are from the mature animal, larger and deeper in flavour, and want a little longer or a marinade first. Both come as front chops from the rib, back chops from the loin and chump chops from the rump: compare the lamb front chops with the mutton front chops. Goat chops are leaner again.

Which chop is the meatiest?

The chump chop. It comes from where the loin meets the leg, so it carries the most meat per bone and a small round bone rather than a rib. Our lamb chump chops and mutton chump chops are cut as 125-150g, 225-250g or 450-500g steaks. Front chops are the leanest and quickest; back chops sit between the two.

How do you cook chops?

Hot and fast. Pat them dry, season, and grill or pan-fry for three to four minutes a side for a thin chop and five to six for a thick one, then rest for a few minutes. Chops with a good fat edge can be stood on that edge first to render it. Every chop here is cut when your order is prepared, so you set the thickness on the product page; single-rib front chops at 85-95g are the quickest.

Can I get chops ready marinated?

Yes. The marinated lamb page carries lamb front and back chops in Steak & Chop, Peri-Peri, Tandoori, Tikka or Steak Dry Rub, marinated on the day the order is prepared. Mutton front chops are also available marinated. Plain chops on this page can be ordered fat on or fat off at no extra cost.
