How long does chicken breast take to cook in the oven?

A 150-180g breast steak takes about 20 to 25 minutes at 200C, and it is ready when the juices run clear and the thickest part has gone opaque all the way through. Cut as an 80-100g minute steak it needs six to eight minutes, because thickness rather than weight sets the time. Boneless thigh is more forgiving and will take five minutes longer without drying out. Rest either for a few minutes before slicing, or the juices end up on the board.

How do you cook chicken breast in a pan?

Order the breast as an 80-100g minute steak or a 150-180g steak, get the pan properly hot, and give it about three minutes a side for the minute steak or five to six for the thicker one, turning once. Strips at 50-60g or 15-20g are faster again and suit a stir fry, while 20-30g dice from the same breast hold together in a curry. Boneless thigh skin-on browns better still, because the skin renders as it cooks and crisps against the pan.
