Each is cut the way you order it: liver, tripe and paya come whole or diced at 10-15g, 25-30g or 50-60g, kidney is diced only in those same three grades, and tongue carries eight styles from 450-500g steaks down to 20-30g strips. Weight is a separate choice, 500g, 1kg, 2kg or 4kg on liver, kidney, tongue and tripe, while paya feet are sold by cut alone. Every order is prepared by the East London butchers behind Onlinemeatshop, who have traded since 1993, and nothing is cut before the day it is dispatched.

Where can I buy beef liver?

You can order British Angus beef liver here, with nationwide delivery, in 500g, 1kg, 2kg or 4kg, either whole or diced at 10-15g, 25-30g or 50-60g. The same page carries kidney, tongue, tripe and paya feet if you are building a mixed order. Nationwide it travels with DPD, which delivers Tuesday to Saturday: an order is dispatched the next working day and arrives the day after. You can collect at our East Ham shop between 12:00 and 18:00 instead.

Is ox liver the same as beef liver?

Yes. Ox liver and beef liver are two names for the same organ, and British butchers have long used 'ox' as the trade word for beef offal, which is why you will also see ox kidney and ox tongue written on a counter card. We list ours plainly as liver, kidney and tongue, all British Angus. If a recipe asks for ox liver, the whole liver or any of the three dice grades will do the job.

How do you cook beef liver?

Liver cooks fast and dries out faster. A slice around 1cm thick wants roughly two minutes a side in a hot pan and is at its best while the centre is still faintly pink. Soaking sliced liver in milk or salted water for 30 minutes first mellows the flavour, which is the step most recipes leave out. Order it whole if you want to set the thickness yourself, or at 10-15g dice for a bhuna or masala where the pieces finish in the sauce. Kidney takes the same quick treatment; tongue is the opposite and wants two to three hours of gentle simmering.

Why is beef liver so hard to find in supermarkets?

Buy it from an offal butcher instead. Liver, kidney, tongue, tripe and paya feet are all listed here, and each is cut when your order is prepared rather than sold ready-cut in a fixed tray. That is why you can take a whole liver, choose 10-15g, 25-30g or 50-60g dice, and order 500g, 1kg, 2kg or 4kg of it. What any particular supermarket chooses to stock is not something we can speak for. Paya feet are the one exception here and are sold by cut rather than by weight tier.

What is beef tripe, and is beef stomach halal?

Tripe is the stomach lining of cattle, and what we list is beef tripe (plain), sold whole or diced at 10-15g, 25-30g or 50-60g, in 500g, 1kg, 2kg or 4kg. It is halal because all five organs are bought as non-stunned halal meat, from certified suppliers, by our parent company Noori Halal Ltd; the certificates sit on our halal certificate page. Tripe rewards long, slow cooking, and paya feet are the usual companion for it in a slow-simmered dish.
