Halal mutton mince is ground from the mature animal, which is why it carries a deeper flavour than lamb and holds its own through a long, slow cook. Two grades are stocked, 10% fat and 20% fat, each in 250g and 1kg packs, and both are Certified Halal with Red Tractor Approved on the title.

Reach for 10% where the pan does the work over time and the masala brings the richness, as in a mutton keema or a salan. The 20% grade is the one for kofta curry, samosa filling and anything shaped by hand, because the extra fat keeps it from tightening.

What is the difference between mutton mince and lamb mince?

Mutton mince comes from the mature sheep and lamb mince from the young animal, and that age gap is the whole difference. Mutton has a fuller, more pronounced flavour and more connective tissue, so it rewards time in the pan and does not need help from a heavy sauce to taste of something. Lamb mince is milder and cooks faster. For nihari-style slow dishes, salan and a long-simmered keema, mutton is the one experienced cooks reach for.

Do I want 10% fat or 20% fat mutton mince?

Pick 10% fat for anything that simmers and 20% fat for anything you shape by hand. At 10% the mince stays loose and separate in a keema or a salan, where oil and masala are already in the pot. At 20% the extra fat renders as it cooks, so kofta, samosa filling and stuffed parathas hold together and stay moist instead of turning dry and crumbly. Both grades come in 250g and 1kg packs.

Is mutton mince good for nihari and paya-style cooking?

Mutton mince suits long-simmered dishes but nihari and paya are made from whole cuts, not mince. Nihari is traditionally built on shank and paya on trotters, and both are on the site as separate products rather than as mince. What mutton mince does very well is the slow keema and salan end of the same cooking style, where the mature flavour holds up over 40 minutes or more. For nihari, use the short shank; for paya, use the sheep feet.
