Brisket is a hard-working forequarter cut whose connective tissue breaks down as it cooks. It's beef only, with nothing else added.
Choose Your Grind
Three grinds to choose from: 8MM for burgers, 6MM for everyday cooking, or fine 4.5MM for keema and koftas, packed at 500g, 1 KG or 2 KG.
How Is Brisket Different From Chuck?
Both are coarse forequarter grinds, but brisket carries more fat, giving a richer flavour. It's available in 8MM, 6MM or fine 4.5MM, from 500g to 2 KG.
How Do You Store It?
Keep it refrigerated, or freeze it on the day it arrives, then allow around 12 hours in the fridge to defrost.
Order 500g for a meal for two, 1 KG to feed a family of four, or 2 KG if you'd rather portion some and freeze it for later. Every pack is ground fresh to whichever style you choose: 8MM, 6MM or fine 4.5MM.
Keep this brisket mince refrigerated until you're ready to cook it, or freeze it on the day it arrives. Once frozen, give it around 12 hours in the fridge to defrost fully, then cook it promptly rather than refreezing it raw.

Keema curry: brown the fine 4.5MM mince with onions, ginger and garlic, then let it simmer with tomatoes and peas until the sauce thickens.
Burgers: shape the 8MM grind into patties and grill or griddle for a few minutes each side.
Koftas: work spices and fresh herbs through the fine grind, shape onto skewers, then grill or bake until browned through.
Brisket mince works well in keema, koftas, meatballs, burgers, chilli and pasta bakes. The fine 4.5MM grind is the one to reach for with keema curry or kofta curry, while the 8MM and 6MM grinds hold their shape better in burgers and slow-cooked mince dishes.
