Fresh Halal British Lamb Breast Ribs are bone-in ribs from Red Tractor-approved, UK-produced lamb, made with 100% Baby Lamb Meat. Certified Halal, they come Fat-On or Fat-Off, from whole racks down to small dice, and suit slow braising, grilling or a rich curry.

What Is This Cut, Exactly?

Breast ribs come from the flatter, layered part of the ribcage, where meat and fat run between the bones instead of sitting as one lean muscle, letting the cut self-baste as it cooks. Every rack is Produced in the UK from 100% Baby Lamb Meat, sold Fat-On or Fat-Off.

Aren't These Just Lamb Short Ribs?

Not quite. What's usually sold as 'short ribs' is a thinner strip cut further down the belly. This rack is the breast rib section itself, available Whole or in 3 Rib and 2 Rib portions, carrying noticeably more meat and fat between the bones than a short-rib strip.

How It's Cut, Trimmed and Packed

Order the rack Whole, as 3 Rib (270-285g) or 2 Rib (145-150g) portions, or broken into Riblets (65-75g) - or diced, mid (20-30g) or small (10-15g), for curry and stew. Every style comes Fat-On or Fat-Off, packed at 500g, 1kg or 2kg.

How Much Should You Order?

Bone-in ribs carry more bone and fat than a boneless joint, so budget extra weight per portion. Packs run from 500g to 2kg: 500g suits two, 1kg feeds a small family, and 2kg covers a bigger curry night or shared grill.

Because rib bones take up some of the pack weight, a 500g pack suits two people in a curry, 1kg serves a small family, and 2kg covers a bigger gathering or grill night.

If you want smaller, quick-cooking pieces rather than a Whole rack, order Riblets or diced portions instead.

Keep this product refrigerated at -2C to +4C and use it by the date on the pack.

It's suitable for freezing on the day it arrives and keeps for up to 1 month in the freezer.

Why do lamb ribs stick to the grill?

A sugary marinade or rub can catch on hot bars before the meat's own fat starts rendering, so the surface tears when you go to turn it.

Should I use Fat-On or Fat-Off for grilling?

Fat-On ribs baste themselves as they cook and are less likely to stick, because the rendering fat forms a thin layer between the meat and the bars.

How do I stop Riblets or diced pieces catching?

Oil the grill bars as well as the meat, and only turn Riblets (65-75g) or diced pieces once the underside has released naturally rather than forcing them early.

How do I know the ribs are ready to turn?

The piece should lift cleanly off the bars with a light nudge - if it resists, give it another minute before turning.
