Cooking Guide: Slow-Cooked Beef Shin (Thor’s Hammer or Whole Joint)

Preparation:
Season the shin generously with sea salt, freshly ground black pepper, and your favourite herbs or rub.

Sear the Meat:
Brown the shin on all sides in a hot pan to create a deep, flavourful crust.

Braise or Roast:
Transfer the shin to a large pot or roasting dish with onions, carrots, celery, garlic, herbs, and beef stock (or water).

  • Cook low and slow in the oven at around 150°C for 4–5 hours, or until the meat is tender and falling off the bone.

  • For smoking, sear first, then smoke low and slow until tender, finishing in a covered tray with stock if desired.

Rest and Serve:
Allow the meat to rest for around 10 minutes before carving or shredding. Serve with the rich braising juices, mash, roast potatoes, or rice for a hearty, comforting meal.

Enjoy the rich, melt-in-the-mouth flavours of Fresh British Halal Beef Bone-In Shin, perfect for impressive, slow-cooked dishes that truly satisfy.
